It’s crystal clear that the thing that characterizes the basically hyper level of quality is the phrase “wine of high expectations”, which describes the type of wine-the only type-that can literally bewitch us.
This is a unique characteristic of the old wine!
The procedure of obsolescence changes not only the color and the winsomeness of the wine, but also the senses of smell and taste which are very important for our enjoyment.
The already thick aroma will unfold extra elements of complexity and charm, elements with the power to upgrade in a “bouquet”.
This bouquet will express itself in a special finesse, and, at the same time, the taste will lose the stiff characteristics and will create an astonishing sense of breadth and deepness in the velum, painting a sum of especially complex and fine impressions.
A necessary condition for all these to happen is the stay of the wine in the proper barrel.
These elements form what we call a “brusque wine”.
