Types of obsolescence and how they affect to the structure and aromatic profile of our wine!
…we choose the type of obsolescence, depending on our expectations and the characteristics of our wine.
a. For a “discreet aroma”: We choose a barrel with low content of polyphenol, so that our wine will be enriched with “sweetness” and notes of vanilla and wood in his aromatic profile.
b. For a “complicated” aroma: Our barrel must be of low content in polyphenoles, because our purpose is a balanced structure in our wine and a “complicated” aromatic profile, with notes of vanilla and spices.
